Grate Expectations has opened at Helch Market in Bournemouth, serving build-your-own mac and cheese made with Dorset artisan cheeses. After months on the road with its food trailer, it now has a permanent kitchen at 3 Gervis Place, open from Wednesday to Sunday.
Grate Expectations started life on the road. Chef Rosie built the business around a street food trailer, serving mac and cheese at weddings, parties, festivals and events across Dorset and beyond, from the New Forest Food Festival to the Old Parlour in Spetisbury.
That trailer, known as Brigitte, made its final outing of the year at the Old Parlour in October. The next step was a big one: a permanent home at Helch Market, the food hall at 3 Gervis Place in the centre of Bournemouth, giving fans a place to find Grate Expectations without hunting down the trailer first.
The kitchen opened on Sunday 1 November, and after a busy first day the team thanked everyone who came down. It now opens from Wednesday to Sunday, 12pm to 10pm.
The signature mac and cheese is made with a blend of locally sourced Dorset artisan cheeses, and the business is open about where they come from. One of the stars of the sauce is Wordsworth, a Gouda-style cheese from The Book and Bucket Cheese Company, made in Dorset less than 20 miles from where Grate Expectations turns it into its sauce.
Using brilliant local producers wherever possible is central to the idea: from a Dorset dairy, to a Dorset kitchen, to the bowl. It gives the dish a clear sense of place, and it is a nice change from the anonymous cheese sauce you might expect from comfort food.
The result is golden and gooey, served in a bowl and finished with a choice of toppings that turns a familiar dish into something more your own.
Every bowl is built to order. You pick the toppings and the kitchen builds it fresh, so the choice is between crunchy and moreish, bold and flavourful, fresh and vibrant, or a little of everything.
Toppings the team have shared include pink pickled onions, Dorset Blue Vinny, their cheese crumble, garlicky basil pesto and slow-cooked Hula pulled pork. One favourite pairing is the pulled pork with sweet pineapple salsa and spicy jalapeños. Another, which Rosie calls hard to beat, brings together pink pickled onions, Dorset Blue Vinny and the cheese crumble.
The full menu is on the Grate Expectations website, and the toppings are where regulars are likely to have the most fun, working out their own combination over a few visits.
The Helch kitchen is not the only way to try it. Grate Expectations also caters weddings, events and private parties, and for couples there is a Wedding Tasting Experience: a selection of its artisan mac and cheese, presented in Kilner jars and carefully packaged, so you can try it before making a final choice for the big day.
Event bookings are made through the Get in touch page on the website. Closer to home, Grate Expectations is now on Deliveroo too, so the same bowls can come to you.
For anyone in the town centre, though, the simplest option is to head to Gervis Place, take a seat in the food hall and build a bowl to your own taste.
